Today was a quiet Easter spent chilling around the flat and watching movies. Much needed relaxation time to write and reflect. For dinner we grilled NZ salmon with honey soy glaze, potatoes, onion, and orange capsicum (bell pepper), and garlic bread, and I made fresh NZ silverbeet, which looks like white celery stalks with huge dark green leaves. You remove the leaves, boil until they're wilted, and then drain, and cook up in a skillet with garlic and olive oil. It tastes super yummy, like spinach! To accompany our light dinner, we had Marlborough Sauvignon Blanc (NZ's number one wine), and chatted on the patio as dusk settled.
